Excellent post! I find myself revisiting this one every time I make a brisket and looking for other recipes on GCG as well! Excellent resource by girls who can out-grill me any day! Please keep the great instructions coming!


Just tried my first brisket on the Kamado grill using this recipe. Was pretty successful keeping the heat on the grill down. Got through the stall fine using Texas crutch but then my coals went out and I lost a lot of internal temp until I got the coals going again. Rested for only about 1 1/2 hours but still came out amazing!

Glad the ribs turned out for you. We wrote the recipe for two racks, if you want to do four racks, simply double everything. Just make sure they can all fit in your smoker. If your smoker is right full with four racks, I would recommend moving the ribs around the smoker to ensure they are cooked evenly. My Traeger and Camp Chef pellet grills do have hot spots. Hope that helps.


Hi E.R. Marty,Side ribs or spare ribs have more fat content and are not as meaty. They typically take longer to cook but this recipe will definitely get these ribs cooked through. Good luck and thanks for commenting. Happy grilling/smoking.Michael


The recipes are well designed and easy to follow, but lack photos of each individual dish. That said, the chapter headers and overall design are very well done, making it a very tastefully done book with lots of usefuleness.


The recipes are straightforward and specific to pellet grills for the most part, though a few reference using the indirect heat part of the grill. They lack nutritional info and serving sizes. Overall, the recipes are on the easy side, with no real bizarre ingredients or techniques. There are a decent amount of interesting recipes typical for pellet grilling recipe books.


The recipes cover everything from pork to desserts to smoked drinks (Smoky Mary, anyone?) and there are tips and techniques specific to each category and recipe throughout. It reads more like a cooking magazine with recipes than just a hodgepodge of recipes by category. Highly recommended for the pellet smoker in your life and honestly, anyone with a pellet smoker should own this book.
